The addition of gluten flour really helps with texture and chew. I haven't made any patties from the boo...Yummy! I haven't made any patties from the book yet. I have a mild fear of making patties ever since those early days of vegan cookbooks where they never held together and you just ended up with mush. But thanks to many of the recent cookbooks, I am overcoming that fear.<br /><br />Did you make the vegan mayo recipe from the book? I made it for the first time a little while ago and I did notice it was oil free and thought of you.
